I finally decided to make my own home-made cupcakes. Yep, I have been so addicted to the cupcakes of my local town, Las Manolitas, but who are 30 min away by car, and thanks God, or I’ll be fat as a hippo.

However, today I got really tempted about cupcakes and thought about giving it a try and make them myself.

Well, for the first time, both my mum and my mother in law where quite impressed, they loved it :) . I took a recipe from Youtube by the famous American Sprinkle Cupcakes. However I decided to go for the raspberry flavor. There are few things I still need to improve, however I got very satisfied with the results.

Cupcake Raspberry Recipe

1  1/2 cup flour

1 tsp baking powder

1/2 baking soda

1/4 tsp kosher salt

4 oz unsalted butter

1 cup sugar

1 egg yellow

2 egg white

1/4 cup whole milk

1/4 cup raspberries

2 tsp vanilla extract

1 tsp lemon juice

4 oz unsalted butter

1/2 cup glacing sugar

1 tsp raspberry juice

1 tsp vanilla extract
